Founded in 1975 by Don Sacramento Rodriguez in Athens, Georgia, the Rodriguez family has built a legacy of culinary excellence. What began as one of the first Mexican restaurants in the United States—El Azteca—has evolved into a thriving restaurant group led by his son, Florencio Rodriguez. Since the opening of the first Don Julio Mexican Kitchen and Tequila Bar in Orlando in 2014, the group has expanded to multiple locations across Central Florida, including Lake Mary, Waterford Lakes, and Eagle Creek.
Pisco Peruvian Gastrobar marks a bold new chapter in the group’s story. According to Founder and CEO Florencio Rodriguez, the decision to open in Lake Mary reflects the area’s vibrant growth and discerning customer base. “We’ve had guests from Heathrow and beyond travel to our Lake Nona location for our Peruvian cuisine,” Rodriguez said. “The enthusiasm we’ve seen reinforces our belief that Lake Mary is the perfect community to introduce Pisco Peruvian Gastrobar.”

Spanning 3,000 square feet, Pisco Peruvian Gastrobar will feature a stunning interior designed by Marianne Poltar of MLP Design LLC and constructed by Shrey Patel of Outline Construction. With seating for 185 guests both indoors and on a spacious outdoor patio, the gastrobar will offer a stylish and welcoming atmosphere perfect for enjoying the rich, diverse flavors of Peruvian cuisine. From classic ceviche to lomo saltado and the signature pisco sour, the menu will showcase fresh, high-quality ingredients and culinary artistry.
